- Boil the brain. Let cool off, then cut into finger thick slices and salt.
- Make a dough out of flour, milk, beaten egg, salt and club soda.
- The dough must have a sour cream thickness.
- Dredge the brain slices in this dough and fry in hot lard. Serve with green lettuce.
