  1. Choose large beans for this recipe.
  2. Pre-soak the night before.
  3. The following day, drain and boil.
  4. After the first boil, change the water.
  5. This time start with warm water.
  6. Repeat this three times.
  7. The last time add salt.
  8. When ready, let cool in the water, then drain completely.
  9. Place in a bowl, add a little pepper, a finely chopped onion, salt.
  10. Mix with mayo and set in the serving bowl.
  11. Garnish with pickled beets, peppers or cucumbers.
