  1. Peel the potatoes, wash and cut into sticks.
  2. Salt and let sit with the salt for a few minutes.
  3. Then dry with a cloth and fry in hot lard.
  4. Remove from the pan with the slotted spoon, draining the lard well.
  5. Serve hot as side dish for roasts and ground meats.
  6. Drain and strain the remaining lard and keep for future use.
