Moldavian Croquettes

  1. Grind the meat with a raw onion, soaked and squeezed bread and two finely chopped and lightly fried (in a tablespoon of lard) onions.
  2. Place the mixture in a bowl, add an egg, salt, pepper and chopped parsley and dill.
  3. Mix everything well.
  4. Take tablespoons of the mixture and with wet hands shape into round or oval patties.
  5. Then bread them and fry in hot lard on both sides.
  6. For the meat you can use beef, pork, mutton, chicken breast or mixed beef and pork.
  7. You may replace the chopped parsley and dill with chopped garlic.
  8. Serve hot, with mashed potatoes, vegetable sautes, lettuce or pickles.
